I forgot to mention poke salat (yes it is salat, though we pronounce it salad). We have a local poke salat festival here, but again my family loves it.....I hate it!! It also produces dark purple berries. My mamaws & momma have always told me that the berries are poisonous. I always liked to play with the berries as a kid and boy can they stain your clothes! We love Poke Salet. I cant stand Spinach , which is a Hybrid form of Wild Poke Salet, My wife Ruth can eat spinach; right out of the can, just warmed up some .. When, we have Poke Salet; Ruth Par-Boils it & then frys it with Middleing Meat Grease. Yum. Now to Collard Greens, Best Vegetable on earth . Cook them with a big piece of Streak- o- lean & as 'Festus Hagen Says' "They Are Jest Poure De Ole Larpeing Matthew". The longer you keep them the better they get. We usually cook 3 or 4 bunches at a time & they last 2 or 3 weeks. You can smell them cooking coming down the drive way. Havent posted lately, been running to the Doctors; getting test run. As an aside.... on this thread and other threads wherein we've discussed various foodstuffs -- I am always surprised that so many of our members still fry things.... I can't remember the last time I had anything fried.... it was probably fried chicken out a restaurant somewhere, possibly on vacation....

As an aside.... on this thread and other threads wherein we've discussed various foodstuffs -- I am always surprised that so many of our members still fry things.... I can't remember the last time I had anything fried.... it was probably fried chicken out a restaurant somewhere, possibly on vacation.... Do you mean deep fry?
I just used a frying pan and some olive oil to cook/fry veggies.

I cook all my veggies (well, most of them) in olive oil. Olive oil is very good for you.

I love cooked greens! My grandfather made the best greens and I was always the first at the table. Sounds weird to love greens but I do.

I'm from the south so all greens are eaten here: collard, turnip, mustard. I like to fry up a little bacon, garlic and onion then add the collards and salt and pepper to taste along with some chicken broth. Cover pot and let greens cook down. YUMMY! I am coming to your house for dinner! I love cooked greens!

I agree with River...........Yuck!! And I'm southern too!! Both my mamaws (when they were alive) & my momma & mother-in-law cook collard greens, turnip greens, spinach with scrambled eggs in them, mustard greens & boiled cabbage. I absolutely positively definitely HATE all of the above! This is definitely one southern tradition that is not going to be passed on by me. But Marilyn you may LOVE them! Growing up everyone ate them up like they were candy except for me!!! I will try to remember to ask my momma & mother-in-law for their recipe. Greens are good for you and make you strong! LOL! I will cook and eat any type of greens. Grew up eating them all the time. That is one of the things I love about the south is that I can get greens all the time.

Hi Kathy Lee, Have you ever eaten 'Creeses'?. Around here they grow wild in bottom land around a river. My wife Ruth loves them, but I cant stand the things. Being in North Georgia, use too when we had Red Dirt Roads & Banks, Had lots of Poke Salet; that grew on the banks. But all dirt roads are GWTW now & no banks & not much Poke salet anymore . I dearly love Poke salet, but cant stand spinach. Take Care. Jerry
We have poke salat all over the place here. Too bad I can't send you some fresh picked. My momma loves it (my daddy did too but he has passed away). I personally cannot stand the stuff so I would gladly send you my share if I could.

At my house, we eat the tops of the beets. The beets are so good, and the green on them are even better. They are very very good for you as well. I like turnip greens also. They are the top part of the turnips.

My grandfather always make a big pot of greens (whatever he had on hand) with string beans and potatoes. It was so, so good. I just can't seem to make it as good as he did.

All the poke salat around here grows wild. I usually have some that comes up every year at the edge of my front yard. Yes, humans are not supposed to eat the berries - they are poisonous to us but the birds love to eat them. Afterwards their poop stains are purple. Gather the leaves and cook them up if you get a chance. Some people eat the stalk too but I have always heard that it's pretty tough. Just don't eat the berries.
