Sissy is sitting on Yancy's lap,telling him all the goodies she's going to make him. Collard greens was one of them. I know they are a southern thing. Anyone have a good recipe for them? I'm always willing to try new things!

I agree with River...........Yuck!! And I'm southern too!! Both my mamaws (when they were alive) & my momma & mother-in-law cook collard greens, turnip greens, spinach with scrambled eggs in them, mustard greens & boiled cabbage. I absolutely positively definitely HATE all of the above! This is definitely one southern tradition that is not going to be passed on by me.
But Marilyn you may LOVE them! Growing up everyone ate them up like they were candy except for me!!! I will try to remember to ask my momma & mother-in-law for their recipe.

My "country grandma" and Mom made several "greens" -- collard, dandelion, etc..... All we ever did with them was cook them to death and use butter and S&P. But then, things that side of the family made were usually quite bland. Boring! But good memories.

Ramps are a vegetable found in Appalachia in the spring. They are kind of a cross between an onion and a garlic, but they smell much worse. I've never actually eaten a ramp, but many people like them. And as awesome mentioned, there is an annual ramp festival in Richwood, WV.

At my house, we eat the tops of the beets. The beets are so good, and the green on them are even better. They are very very good for you as well.

I forgot to mention poke salat (yes it is salat, though we pronounce it salad). We have a local poke salat festival here, but again my family loves it.....I hate it!!
It also produces dark purple berries. My mamaws & momma have always told me that the berries are poisonous. I always liked to play with the berries as a kid and boy can they stain your clothes!

They're not necessarily a "southern thing"...Got their start from down there though...If you wanna cook some, just make sure you clean them really well first (touch of dish soap and water), and rinse well...Then either use like somebody else said a hambone for seasoning, as well as something you can find in the supermarket called "collard green seasoning" (yes, they DO make this), or you can use salt (I use salt substitute)...Or you can use some turkey parts to cook with them-lots of people use hamhocks, but I can't anymore cuz of my hi-chloresterol..Hamhocks have a LOTTA fat in them anyway...
Cook for about 2-3 hours if they are fresh - if they're frozen, then about a 1.5 hours...Serve with some hot sauce, or do like my mother used to and put some sliced tomatoes on them, and have some some cornbread to sop up the pot-likker...Bon apetit...
