Shows like 'I Love Lucy' (I Love Lucy) and 'The Andy Griffith Show' (The Old Fishing Hole) had actual lyrics to their theme songs. When this topic was first posted, I went searching for them. I found them on a community website where people can post their own poetry (which includes things like song lyrics). The website owns the copyright, meaning that the poem posted above really has no connection to The Waltons except that the lyrics fit the theme song. They aren't actual lyrics to the show. It's just a poem written by a fan.
It's highly doubtful that there is a recording, even by the author, since he would have to buy the rights to use the theme song.

Eric Scott and Joe Conley recorded this for their CD, which is quite good. Has anyone else here heard it? I bought it at a Walton’s reunion in 1999.

Their album dates from the 1970s. Later released on CD.
