In Judy Norton's video sub-forum, she made a video in which she makes Olivia's authentic applesauce cake as printed in The Homecoming book. The video is just over 7 minutes, but for those who are interested, the actual recipe which Judy follows in the video is posted below the video for your convenience:
OLIVIA’S APPLESAUCE CAKE (serves 12)
1 cup butter 1 cup sugar 2 cups unsweetened applesauce 2 cups light raisins 1 cup chopped walnuts 1 tsp baking soda 3-1/2 cups flour (sifted) 2 eggs 1 tsp cinnamon 2 tsp cloves 2 tsp nutmeg pinch of salt
Sift together: Flour, baking soda, salt, cinnamon, cloves and nutmeg. Take 1/2 cup of flour mixture and stir into the nuts and raisins. Set both aside.
Cream butter until whipped soft. Add sugar a little at a time until mixture is smooth. Beat in eggs vigorously. Alternately stir in flour mixture and applesauce. When all mixed together, add nuts and raisins and mix well.
Pour batter into a well-greased cake mold. Bake in pre-heated oven at 350 degrees for one hour. Cool ten minutes, then turn out on cake rack. Frost with Whiskey Frosting when cake is cool.
JANE’S WHISKEY FROSTING
1/4 cup butter 1 T cream Pinch of salt 2 cups powdered sugar 2 T bourbon
Cream butter, add sugar and salt, then cream and whiskey. Whip until smooth. Frost cake.

I have the book The Homecoming and the recipe is at the back of the book.I would like that cake, but no raisins in it,and I wouldn't want that kind of icing on it.

There's a flavoring that I think is called Butternut which I just love the aroma of when it's used in making cakes. Maybe if I made this, I would use this for the frosting. And no bourbon either. I don't keep stuff like that since I never drink or cook with it.

I noticed she didn’t measure too carefully when putting the ingredients together. Maybe that’s how real chefs cook too.
The cake seemed to turn out nicely.

Unlike cooking, baking is a more exact science since you're actually chemically changing the ingredients. Measuring is advisable when it comes to baking.

I don't keep stuff like that since I never drink or cook with it. I don't keep alcohol in the house since my husband is in recovery. I believe his home should be the one place where he doesn't have to face that temptation.

I'd bet many of our grandmothers and great grandmothers never measured. A pinch of this a dash of that.... was their way of measuring back in the day.

I have a lot going on with a move at the end of the month so I needed a diversion from the pressure of finding a new home and taking care of my mom so I decided I'm going to make this cake. I'd give myself an A for effort but I'm no Livy when it comes to making a cake.

^^^^ I am in the process of moving now. Why the heck do we have so much stuff? I keep throwing stuff away and have been for the last six months.

Wasn't there a thread on a recipe for applesauce cake and people said it was awful? I wonder if they included an updated one in the book?

I look forward to making that cake. Sounds yummy! But, I can relate with anyone having to go through stuff when moving! After I left my job at The Hollywood Entertainment Museum, I started my own business as a professional organizer. My clients were primarily in show business. I admire all their talent, but just like us, they had tremendous difficulty in throwing away all their “stuff. It is hard for ALL of us - including me! My kids use to joke that if my clients saw my own clutter, they would run screaming into the streets!!
Most of my clutter is under control now (well we won’t quibble about the definition of “clutter”) but stuff can easily creep up on all of us! So embrace the sentiment, “A little dirt don’t hurt” and don’t put a deadline on dealing with your “stuff”.
I always wondered with ALL the Waltons living in one house, why did we never see any mess? Well, we must just accept the set designers didn’t want to have to clean up “Walton stuff” after a scene was shot!

^^^^ I am in the process of moving now. Why the heck do we have so much stuff? I keep throwing stuff away and have been for the last six months. I filled my trash can, went to Salvation Army and put things out on the curb including a fully working piano that believe it or not a couple walking down my block came back and took. All I know is I still have more to do but I'll get it done including throwing more stuff away.
