Dessert for us is also for special occasions. one of my sisters and her grandson are here for the weekend. We'll all go out to lunch, then come back for dessert. I'm taking advantage of the wonderful fruit available now at the local Farmer's Market to make peach /blueberry cobbler. EM The sun came up today! Wahoo! Special occasion! Let's have dessert! P.S......I can always find some reason to have dessert!!!!

Favorite of my momma - chess cake and strawberry pie.
I make strawberry-rhubarb pie. Is your strawberry pie the kind with a sweet glaze on top? I have never had rhubarb in my life. I have always wanted to try a rhubarb or strawberry-rhubarb pie, hint-hint!
Strawberry Pie
Two graham cracker crusts 4 Tablespoons flour 4 Tablespoons strawberry Jello mix 1 1/2 teaspoons lemon juice 1 cup water 1 cup sugar 1 pint strawberries
Prepare the strawberries by cutting off the tops and washing well. You can leave them whole or cut them up. Place them in the graham cracker crusts.
Mix the flour and strawberry Jello mix together. Then add the lemon juice, water and sugar. Mix well. Cook on the stove about ten minutes until thick. Not on too high of a temperature or it will become too sticky/thick or scorch. Then pour it over the strawberries in the graham cracker crusts. Refrigerate. You can serve it with Cool-Whip on top if you desire.

I make chess pie but I have never heard of chess cake.
My momma makes chess pie too and it is totally different from her chess cake. The first time we ever had chess cake was in 1976. I was ten years old and my paternal grandfather had passed away. People brought us food and someone sent a chess cake. It was all sunk in (like when a cake falls flat in the oven). I thought why would someone send such a sad looking cake (remember I was ten). But let me tell you what it was delicious! My momma got the recipe from them and she has made it several times every year since 1976. The cake does sink/collapse, that's normal and the middle is my favorite part of it.
Chess Cake
9" x 13" glass or metal baking pan/dish 1 box butter cake mix (any brand) 2 eggs 1 stick butter 1 box powdered sugar 8 oz. package cream cheese 2 more eggs
Preheat oven to 350 degrees. Grease the 9" x 13" pan/dish. Completely IGNORE the instructions on the box of cake mix. Combine the box of cake mix, 2 eggs and 1 stick butter (melted). Spread well in the greased pan/dish.
Combine the powdered sugar, cream cheese (softened) and 2 eggs. Spread well on top of cake mixture. Bake for 35 to 40 minutes. It is a very moist cake except for the edges of it.

I will have to freeze some rhubarb and strawberries. They are in season now but won't be for much longer. Note to self, add strawberry rhubarb pie to the list! I have a strawberry pie recipe but it does not use Jello.

OMG, are you kidding! I love rhubarb. I always make rubarb sauce or strawberry/rhubarb sauce each year for ice cream and what ever else we put it on. LOL

I wondered how they managed to have dessert every night during the war when everything was rationed. Yes they had chickens so they had their own supply of eggs and they made their own butter from Chance's milk but sugar was heavily rationed. Mom told me that you could only get 2 lbs of sugar a month during the war.

We didn't have dessert much when I was growing up ,me an my brother's in the summer use to pick blackberries an moma would bake a cobbler I do miss that .My dad said they would trade rationing stamps when he was growing up ,so maybe the waltons done that to get more sugar.
